Well, I created two midis from my Powertab score (guitar/bass tablature).

I don't know if midis are very useful these days, but I hope this helps. I'm sure there are programs you can create midis with but I don't know any besides how I made these.

I have MIDIs for Blackened Crown and Telescope Eyes
I´ll give you the links when I get home (if you want them... do you?)

to actually record MIDIs with instruments, you need a keyboard and a nice sound card... or special devices, like one of those MIDI mics that can be attached to a guitar... they´re soooo expensive here!
however... I know close to nothing about recording MIDIs, so don´t listen to me
